Cadiz 'El Muelle de Olaso' Palomino 2024, Luis Perez

An unbelievably delicious and fascinating wine - this is what's called a 'vino de pasto' which is an unfortified Palomino. So almost like a Fino Sherry but without the fortification or extreme acetaldehyde notes. Bodega Luis Perez has been majoring on this style of wine, which is extremely traditional in the area but had died away, making world class examples. It's textural, nutty, pithy lemon and lemon oil scented and with a lovely salty, saline finish. Loads going on here, ridiculously good value for money.
